Ingredients
- 1 small red onion chopped
- Mixed peppers (chopped)
- Sweet corn
- Oregano
- Grated cheese
- Sub rolls (available in any supermarket)
- Red chilli flakes (optional)
Sauce:
- 1/4 chopped onion
- 1 tomato tin
- 1 tbsp tomato puree
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp mixed herbs
- 1 tsp garlic
- 1/2 tsp green chillies
- 1/2 tsp sugar
Chicken filling (optional):
- Homemade marinade (see recipe)
- 2 tbsp olive oil
- Knob of butter
- 250g boneless chicken (cubed)
- Salt to taste
- Mayonnaise
Method
- Recite Bismillah.
- Marinate chicken in homemade marinade for a couple of hours.
- Cook on high heat with butter & olive oil till water evaporates & chicken is cooked Add salt if needed. Turn off heat.
- When cool add desired amount of mayo & mix.
- Prepare sauce by Cooking onions in a little bit of oil till soft & transparent.
- Add in remaining ingredients & cook till thick.
- Spread the sauce on the insides of the sub rolls. (Left over Sauce can be frozen for next time.)
- Fill subs with chicken (Optional), mixed peppers, red onions, sweet corn & red chillies.
- Sprinkle cheese & oregano.
- Grill or bake till cheese melts & enjoy!
