Subs

Ingredients 

  • 1 small red onion chopped
  • Mixed peppers (chopped)
  • Sweet corn
  • Oregano
  • Grated cheese
  • Sub rolls (available in any supermarket)
  • Red chilli flakes (optional)

Sauce:

  • 1/4 chopped onion
  • 1 tomato tin
  • 1 tbsp tomato puree
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp mixed herbs
  • 1 tsp garlic
  • 1/2 tsp green chillies
  • 1/2 tsp sugar

Chicken filling (optional):

  • Homemade marinade (see recipe)
  • 2 tbsp olive oil
  • Knob of butter
  • 250g boneless chicken (cubed)
  • Salt to taste
  • Mayonnaise

Method 

  1. Recite Bismillah.
  2. Marinate chicken in homemade marinade for a couple of hours.
  3. Cook on high heat with butter & olive oil till water evaporates & chicken is cooked Add salt if needed. Turn off heat.
  4. When cool add desired amount of mayo & mix.
  5. Prepare sauce by Cooking onions in a little bit of oil till soft & transparent.
  6. Add in remaining ingredients & cook till thick.
  7. Spread the sauce on the insides of the sub rolls. (Left over Sauce can be frozen for next time.)
  8. Fill subs with chicken (Optional), mixed peppers, red onions, sweet corn & red chillies.
  9. Sprinkle cheese & oregano.
  10. Grill or bake till cheese melts & enjoy!
