
Ingredients
- 300g digestive biscuits
- 150g melted butter
- 400g Terry’s orange chocolate (melted, cooled but still runny)
- 300g full fat Philadelphia cream cheese
- 250g mascarpone cheese
- 300ml double cream
- Terry’s orange chocolate to garnish.
Method
- Recite Bismillah.
- Place water in a saucepan to boil.
- In a large bowl that will fit on top of the saucepan & not sink in, break the chocolate into chunks.
- Lower the heat completely & place bowl over the saucepan. (This is known as a double boiler) Let the chocolate melt, stirring occasionally.
- Crush Biscuits in a food processor
- .Pour in the butter & blend.
- Press down firmly in a 8″ spring form round tin lined with grease proof paper.
- In a stand mixer or with a electric whisk, whisk the cream cheese and mascarpone cheese together.
- Mix in the double cream & whisk slowly till the mixture is thick & holds its shape.
- Fold in the cooled melted Terry’s orange chocolate until well combined.
- Spread the mixture over the biscuit base.
- Allow to set overnight or for at least 6 hours.
- Decorate according to preference.
