Oven Roasted Chops

Ingredients

  • 500g lamb chops
  • 1 tsp garlic
  • 2 tbsp homemade marinade (see recipe)
  • 1 tbsp Worcester sauce
  • 1/2 tsp mustard paste
  • 1 tbsp balsamic vinegar
  • 1 tbsp Nandos vusa sauce
  • 1 tsp oregano
  • Red chilli flakes to taste
  • 1/4 tsp cumin seeds
  • 1 heaped tbsp mayo
  • 1 heaped tbsp tomato puree
  • 2 tbsp grounded tin tomato
  • 1/2 tsp honey
  • Drizzle of olive oil
  • 1 tsp Cajun spice
  • 4 cherry tomatoes halved
  • 1 small onion (chunked)
  • 1 green pepper (chunked)
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste

Method

  1. Recite Bismillah.
  2. Marinate chops, onions & peppers in listed ingredients overnight. If you are going to add homemade marinade, do not add garlic.
  3. Preheat oven to 180 c.
  4. In a oven proof dish place the chops with the chunked onions & peppers. Cover with foil.
  5. Bake until tender mixing every 20 mins.
  6. Serve with chips / mash potato / roast potatoes! enjoy!
