Mediterranean Pasties / Pies

Ingredients

  • 1 medium onion ( finely chopped)
  • 4 tbsps sunflower oil
  • 1 green pepper (finely chopped
  • 1 red pepper (finely chopped)
  • 1 yellow pepper (finely chopped)
  • 300g baby courgettes (chopped)
  • 300g mushrooms (chopped)
  • 1 cup sweetcorn
  • 1 x Napolina tomato & basil sauce
  • 2 cups grated cheddar cheese
  • salt to taste
  • pepper to taste
  • 1 beaten egg

Method

  1. Recite Bismillah.
  2. Cook onions in oil till transparent.
  3. Then add peppers, courgettes, sweetcorn & mushrooms. Cook till water evaporates.
  4. Add the tomato & basil sauce according to preference & cook till thick. Season with salt & pepper.
  5. Allow to cool & then add cheddar cheese. Season if needed.
  6. Fill pastries / pies. Brush the tops with egg.
  7. Freeze & bake as needed in a preheated oven at 200c.
