
Ingredients
Rice:
- 1 1/2 cups rice (washed & soaked for 30 mins)
- 3 tsp salt
- 3/4 medium onion (chopped)
- 2 tbsps oil
- Big knob of butter
- 1 1/2 cup mixed vegetable
- 1 tsp garlic
- 1 tsp red chilli flakes
- 3 tbsps dark soya sauce
- 1 tsp MSG (Monosodium glutamate)
Chicken:
- 500g boneless chicken (cubed / stripped)
- 1 1/2 tbsp dark soy sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red chilli powder
- 1 heaped tbsp corn flour
- 1 tsp garlic paste
- 1 small beaten egg
- 4 tbsps water
Sauce:
- 1 large onion or 2 small onions (chunked )
- 1/2 a green pepper (chunked)
- 7 tbsps oil
- 2 tsps ginger garlic paste
- 2 tbsps chings schezwan chutney or to taste
- 2 tbsps Maggie chilli sauce to taste
- 2 tbsps Chings Red chilli sauce or to taste
- 4 tbsps dark soy sauce & more to taste
- 1 mug water
- 4 tsps corn flour
- 1 tsp MSG (Monosodium glutamate)
- Salt to taste
- Spring onions to garnish
Method
- Recite Bismillah.
- Marinate chicken in salt, black pepper, red chilli powder, garlic paste & soy sauce for at least 30 mins.
- Meanwhile fill the pot with enough water to cover the rice.
- Add salt & allow to boil till full cooked (approx 8 mins).
- Cook onions in oil & butter till transparent.
- Then add mixed veg & cook till tender.
- Now add garlic, red chilli flakes & soy sauce. Cook for a few mins.
- Add the rice & mix well.
- Then add the MSG, mix well & cook for few mins. Turn off heat.
- For the chicken, mix together the corn flour, egg & water. Add to the marinated chicken.
- Fry chicken in very hot oil for 3 1/2 mins or till chicken is fully cooked. Drain & set aside.
- In a pot prepare the sauce by cooking the onions & peppers in oil till soft & transparent.
- Add the ginger garlic paste & cook for few seconds.
- Then add the Maggie chilli sauce, Chings red chilli sauce, Chings red chutney & soy sauce. Cook for few mins & then add the chicken.
- Mix corn flour with water & add to the sauce. Allow to cook on low heat till the oil releases & the sauce is to desired consistency. Season as needed & garnish with spring onions.
- Serve with the fried rice.
