Ingredients
- 250g grated butter (straight from the fridge)
Dough:
- 250g chopped butter (straight from the fridge)
- 4 cups Turkish plain flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tbsp white vinegar
- 1 tbsp lemon juice
- 1 tsp cream of tartar
- 1 egg yolk
- 1 cup water (fridge water)
Flour mixture to sprinkle:
- 1/4 cup Turkish flour
- 1/4 cup corn flour
- 1 tsp baking powder
- 1 tsp cream of tartar
Method
- Recite Bismillah
- Grate 250g butter & freeze for 30 mins.
- Then in a bowl rub together flour & the chopped butter to form breadcrumb like crumbs.
- Add remaining ingredients to form a hard dough. Be careful not to knead too much.
- Roll out the pastry into a rectangle.
- Sprinkle the grated butter & some flour mixture.
- Fold.
- Refrigerate for 10 mins. Then roll out again. Sprinkle the flour mixture & fold again. Repeat this 7 times.
