Homemade Pastry

Ingredients

  • 250g grated butter (straight from the fridge)

Dough:

  • 250g chopped butter (straight from the fridge)
  • 4 cups Turkish plain flour 
  • 1 tsp salt
  • 1 tsp baking powder 
  • 1 tbsp white vinegar 
  • 1 tbsp lemon juice 
  • 1 tsp cream of tartar 
  • 1 egg yolk 
  • 1 cup water (fridge water)

Flour mixture to sprinkle:

  • 1/4 cup Turkish flour 
  • 1/4 cup corn flour
  • 1 tsp baking powder 
  • 1 tsp cream of tartar 

Method 

  1. Recite Bismillah 
  2. Grate 250g butter & freeze for 30 mins.
  3. Then in a bowl rub together flour & the chopped butter to form breadcrumb like crumbs.
  4. Add remaining ingredients to form a hard dough. Be careful not to knead too much.
  5. Roll out the pastry into a rectangle.
  6. Sprinkle the grated butter & some flour mixture.
  7. Fold. 
  8. Refrigerate for 10 mins. Then roll out again. Sprinkle the flour mixture & fold again. Repeat this 7 times.
