Ingredients
- 4 pints full fat milk
- 1 tin condensed milk
- 600ml cream
- 240g sugar
- 4 tbsps cornflour
- 1 vanilla pod or vanilla extract
Method

- In a pot bring the milk, condensed milk, double cream and sugar to a simmer on medium heat. Stir continuously.
- Remove some milk from the pot and whisk well with the cornflour, then add this mixture to the pot.
- Allow to boil for a further 15 minutes, stirring continuously.
- Once boiled, turn off heat and allow to cool. Then sieve the mixtures to remove any lumps into a bowl. Scrape the vanilla bean paste into the mixture or add the extract. Different vanilla extracts or essences require different amounts, so you will have to be the judge of this and taste the mixture. Always starts off with a few drops .
- Whisk till well combined and refrigerate overnight. The mixture can be made a day or two in advance.
