Shakshuka

~Recipe Credit: Abu Aa’ishah~

We have two recipes for this:

1. A Gordon Ramsay inspired Shakshuka

2. A tweaked & more flavoursome version. (Scroll down for this)

Recipe 1:

Ingredients

  • 3 tbsp olive oil
  • 1/2 onion or 1 small onion
  • 3/4 cup mixed peppers (finely chopped)
  • 1 tomato (finely chopped)
  • 1 tbsp tinned tomato paste
  • 1/2tsp garlic paste
  • 1 heaped tsp red chilli powder
  • 1/2 tsp cumin seeds
  • 1/2 salt
  • 1/4 tsp black pepper
  • 4 eggs
  • 2 green chillies sliced (optional)

Method

  1. Recite Bismillah.
  2. Heat oil in a non stick frying pan.
  3. Cook onions, green chillies & peppers in garlic paste till soft.
  4. Then add red chilli powder & Cumin seeds. Cook for a few seconds.
  5. Add chopped tomato, tomato paste, , black pepper & salt.. Cook on medium heat till the tomatoes are tender.
  6. Make 4 holes & Crack open 1 egg in each hole.
  7. Cover with a lid & cook on medium to low heat for 3 1/2 minutes -4 minutes till the egg whites are cooked & the yolks are still runny.
  8. Season with salt pepper & serve with toast / croissant. Enjoy!

Recipe no 2:

Ingredients

  • 3 tbsp olive oil
  • 1/2 medium red onion (finely chopped)
  • 1/2 cup mixed peppers (finely chopped)
  • 1/2 cup or according to preference tinned tomato (grounded)
  • 1/2 tsp garlic paste
  • 1 tsp red chilli powder
  • 1/2 salt
  • 1/4 tsp black pepper
  • pinch of turmeric powder
  • 3 eggs
  • 1 tsp green chillies (grounded)
  • 1 tbsp fresh red chillies (ringed)

Method

  1. Recite Bismillah.
  2. Heat oil in a non stick frying pan.
  3. Cook onions & peppers in garlic paste till soft.
  4. Then add red chilli powder, turmeric, fresh red chillies & green chillies. Cook for a few seconds.
  5. Add tin tomato, black pepper & salt.. Cook on medium heat till oil separates, making sure the onion & peppers have not dissolved.
  6. Make 3 holes & Crack open 1 egg in each hole.
  7. Cook until the edges are set. Then flip over the eggs for 15-20 seconds.
  8. Flip eggs on to plate, along with the rest of the contents of the pan.
  9. Season with salt & pepper & serve with toast / croissant. Enjoy!
