Ingredients
- 1kg salad / baby potatoes
- 1 medium red onion (finely chopped)
- 300g Mayonnaise or according to preference
- Fresh sour cream – optional
- Lemon juice- optional
- Salt to taste
- Pepper to taste
Method
- Recite ﷽ .
- Wash potatoes with skin on.
- Cut into desired sized chunks. Do not peel.
- Place the potatoes in a pot and fill them with water until it sits about an inch above them. Add 1 tsp salt.
- Bring the water to a boil and then allow to cook for 7-15 mins. This will vary depending on the types of potatoes. You will know they are ready when you can smash them easily with a fork.
- Drain and allow to cool completely.
- Combine potatoes andonions in a large bowl. Add Desired amount of mayonnaise, sour cream, lemon juice salt & pepper.
