Potato Salad

Makes 1 x 9″ foil tray

Ingredients 

  • 1kg salad / baby potatoes
  • 1 medium red onion (finely chopped)
  • 300g Mayonnaise or according to preference
  • Fresh sour cream – optional
  • Lemon juice- optional
  • Salt to taste
  • Pepper to taste

Method 

  1. Recite ﷽ .
  2. Wash potatoes with skin on.
  3. Cut into desired sized chunks. Do not peel.
  4. Place the potatoes in a pot and fill them with water until it sits about an inch above them. Add 1 tsp salt.
  5. Bring the water to a boil and then allow to cook for 7-15 mins. This will vary depending on the types of potatoes. You will know they are ready when you can smash them easily with a fork.
  6. Drain and allow to cool completely.
  7. Combine potatoes andonions in a large bowl. Add Desired amount of mayonnaise, sour cream, lemon juice salt & pepper.
  8. Remember us in your du’aas and enjoy!
