Chicken Parmesan

Ingredients

Marination:

  • 500g boneless chicken (sliced)
  • 3 big tbsps mayonnaise (or enough to coat)
  • 1 tsp crushed green chillies (or to taste)
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 3/4 tsp garlic
  • 1/2 tsp onion powder

Coat in:

  • breadcrumbs

Sauce:

  • 50g butter
  • 1/4 cup flour
  • 1 1/2 cups milk
  • Pepper to taste
  • salt to taste

Mixed veg:

  • mixed veg (we use the frozen packet from Sainsburys)
  • few knobs of butter
  • salt to taste
  • pepper to taste
  • 1 tbsp mayonnaise (or to taste)

Toppings:

  • mozzarella cheese
  • green chillies (ringed)
  • red chilli flakes

Method:

  1. Recite Bismillah.
  2. Marinate chicken for at least 4 hours. (Preferably overnight).
  3. Coat chicken in breadcrumbs.
  4. Shallow fry on medium- low heat in a non stick pan till golden brown.
  5. Make sauce by adding butter, flour & milk to pot. Boil till slightly thick. Season with salt & pepper & set aside.
  6. Cook mixed veg in the listed ingredients till tender.
  7. Preheat oven to 100 c.
  8. In a tray place the chicken with a spoonful of white sauce, followed by a good sprinkle of cheese, topped with green chillies & red chilli flakes.
  9. Bake till cheese melts. Serve with mixed veg & chips! enjoy!
