Ingredients
Marination:
- 500g boneless chicken (sliced)
- 3 big tbsps mayonnaise (or enough to coat)
- 1 tsp crushed green chillies (or to taste)
- 1/2 tsp pepper
- 1/2 tsp salt
- 3/4 tsp garlic
- 1/2 tsp onion powder
Coat in:
- breadcrumbs
Sauce:
- 50g butter
- 1/4 cup plain flour
- 1 1/2 cups milk
- Pepper to taste
- salt to taste
Mixed veg:
- mixed veg (we use the frozen packet from Sainsburys)
- few knobs of butter
- salt to taste
- pepper to taste
- Splash of double cream
Toppings:
- mozzarella cheese
- green chillies (ringed)
- red chilli flakes
Method:
- Recite Bismillah.
- Marinate chicken for at least 4 hours. (Preferably overnight).
- Coat chicken in breadcrumbs.
- Shallow fry on medium- low heat in a non stick pan till golden brown.
- Make sauce by adding butter, flour & milk to pot. Boil till slightly thick. Season with salt & pepper & set aside.
- Cook mixed veg in the listed ingredients till tender.
- Preheat oven to 100 c.
- In a tray place the chicken with a spoonful of white sauce, followed by a good sprinkle of cheese, topped with green chillies & red chilli flakes.
- Bake till cheese melts. Serve with mixed veg & chips! enjoy!
