Easy Chicken Biryani

Ingredients

  • 1 chicken (cut into pieces)
  • 1 cup fried onions
  • 1/2 cup yogurt
  • 1/2 cup grounded tin tomato
  • Juice of half a small lemon (3 tsps)
  • 1 1/2 tsps coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt (or to taste)
  • 1/4 tsp saffron
  • 2 tsps ginger garlic
  • 5 tbsps oil
  • 1/4 tsp turmeric
  • 1 level tsp red chilli powder
  • 1 taj (cinnamon stick)
  • 2 lawing (cloves)
  • 1/2 tsp cumin seeds
  • Green chillies to taste
  • 2 whole green chillies
  • 1 tsp paprika powder
  • Handful chopped coriander
  • shaan bombay biryani mix to taste (optional)
  • 1 1/2 cups rice
  • 3 level tsps salt
  • Fried onions
  • butter/ghee

Method

  1. Recite Bismillah.
  2. Marinate chicken in listed ingredients for a few hours.
  3. Boil rice till half cooked with the salt . (about 5-6 mins)
  4. Line a small pot with foil in such a way that you will then be able to cover the biryani at the end.
  5. Add a few small knobs of butter/ ghee to the bottom of the pot.
  6. Now add half the rice.
  7. Add all of the chicken.
  8. Then layer the remaining rice.
  9. Sprinkle fried onions & few knobs of butter / ghee.
  10. Sprinkle 3/4 cup water over the rice.
  11. Seal the biryani with the foil & then a tight lid.
  12. Cook on high heat for 5 mins till steam releases.
  13. Then cook on medium heat for 10 mins.
  14. Finally cook on low heat with a flat skillet underneath for an hour. Place something heavy on lid as this will stop the steam from escaping the pot. Enjoy!
