Chicken & Spinach Plaited Pie

Ingredients 

  • 500g whole chicken breast
  • 1 tsp salt
  • 3/4 tsp pepper
  • 2 tbsps yogurt
  • 1 tsp ginger garlic
  • 1 tsp garlic
  • 1/2 onion (finely chopped)
  • 150g mushrooms (finely chopped) / 1 tin sliced mushrooms
  • Mayonnaise to taste
  • cream cheese to taste
  • 1 1/2 cups mixed peppers (or to preference)
  • 1 packet baby spinach (300g)
  • big knob of butter
  •  1 tsp salt or to taste
  • 1/2 tsp black pepper  or to taste
  • green chillies to taste
  • 1/4 tsp turmeric powder
  • grated cheese (optional)
  • puff pastry
  • beaten egg to glaze

Method

  1. Recite Bismillah.
  2. Cook chicken (whole breast) with onion in ginger garlic, salt, pepper, green chillies, turmeric & yogurt till water evaporates, with lid on, on low heat.
  3. Shred Chicken & keep aside. Do not throw away the stock.
  4. To the stock, add garlic, salt, pepper, mixed peppers, mushrooms & cook till soft.
  5. Add chicken & mix well. Cook for few mins.
  6. Turn off heat. Add cream cheese & mayo.
  7. In a separate pot cook spinach in a little butter till tender. Discard liquid & cool. Add to above mixture along with cheese
  8. Fill pies & glaze with beaten eff.
  9. Freeze & bake at 180c till golden as needed. Enjoy!
