Ingredients
- 1/2 cup butter
- Zest of 1 lemon
- 3/4 cup sugar + 2 tbsp sugar
- 1 egg
- 2 cups plain flour
- 2 tsp baking powder
- 1 tsp salt
- 2 cups fresh blue berries
- 1/2 cup buttermilk
- 1/2 tsp vanilla
- Sugar to sprinkle
Method
- Recite Bismillah
- Preheat oven to 350c
- Cream butter with lemon zest & sugar until light & fluffy.
- Add the egg & vanilla & beat until combined.
- In a separate bowl combine blueberries with 1/4 cup flour.
- In another separate bowl whisk together the remaining flour, baking powder & salt.
- Add the flour mixture to the batter a little at a time, alternating with buttermilk.
- Fold in the blueberries.
- Spoon into cupcake / muffin cases
- Sprinkle batter with sugar.
- Bake for 15-20 mins until lightly golden 😊😊
