Lemon Blueberry Muffins 

Ingredients 

  • 1/2 cup butter
  • Zest of 1 lemon
  • 3/4 cup sugar + 2 tbsp sugar
  • 1 egg
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 cups fresh blue berries
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla
  • Sugar to sprinkle 

Method

  1. Recite Bismillah
  2. Preheat oven to 350c
  3. Cream butter with lemon zest & sugar until light & fluffy.
  4. Add the egg & vanilla & beat until combined.
  5. In a separate bowl combine blueberries with 1/4 cup flour.
  6. In another separate bowl whisk together the remaining flour, baking powder & salt.
  7. Add the flour mixture to the batter a little at a time, alternating with buttermilk.
  8. Fold in the blueberries.
  9. Spoon into cupcake / muffin cases
  10. Sprinkle batter with sugar.
  11. Bake for 15-20 mins until lightly golden 😊😊
