Ganache For Dripping!

So working with chocolate may scare a lot of you when it comes to decorating a cake with ganache drips to get that fun and snazzy look. Here are a few tips that may help you achieve the look that is everywhere on Instagram.

When using dark chocolate, the ratio of chocolate to cream is 2:1 .

Our preferred quantities are 4oz dark chocolate and 1/2 cup cream.

As dark chocolate has more cocoa ( we advise you to use dark chocolate which has at least 65-70 percent cocoa solids).

The quantities when using different types of chocolate differs.

Milk chocolate – 3 parts chocolate to 1 part cream: 6 oz chocolate and 1/2 cup cream.

White chocolate – 4 parts chocolate to 1 part cream: 8 oz chocolate and 1/2 cup cream.

The above quantities make quite a bit of ganache which comes in handy for us the next day. If you wish to make less visit our Frosting page for half recipe!
