Sweet & Sour Chicken With Fried Rice

Ingredients

Fried rice:

  • 1 1/2 cup rice
  • 3 tsps salt
  • 1 medium onion (chopped)
  • 2 tbsps oil
  • big knob of butter
  • 1 1/2 cup mixed veg
  • 1/4 cup spring onion (chopped)
  • 1/2 tsp garlic
  • 1 tsp red chilli flakes
  • 3-5 tbsps soy sauce
  • 1 tsp msg

Chicken:

Marination:

  • 500g boneless chicken (stipped)
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 small egg (beaten)
  • 1 tbsp cornflour
  • 2 -4 tbsps water

Sauce:

  • 4 tbsps oil
  • 1 medium onion (finely chopped)
  • 1 tsp green chillies or to taste
  • 1/2 green pepper or according to preference (chunked)
  • 3 tbsps sugar
  • 4 tbsps vinegar
  • 1 1/2 tbsps corn flour
  • 2 tbsps soy sauce
  • 2-3 tbsps ketchup
  • 1 tbsp Worcester sauce
  • 1/2 tsp red chillies or to taste
  • 1 tbsp tomato puree
  • 1/2 tsp salt
  • 1 tsp garlic

Method

  1. Recite Bismillah.
  2. Soak rice for 30 mins.
  3. Marinate chicken in listed ingredients for 30 mins minimum.
  4. Place rice with salt in a pot & add enough water to cover the rice. Allow to boil till fully cooked. Drain rice & set aside.
  5. In a another pot cook onions in oil & butter till transparent.
  6. Then add mixed veg, spring onions, garlic, red chilli flakes & soy sauce. Cook for a few seconds.
  7. Add boiled rice & msg. Mix. Season if needed.
  8. Prepare the sweet & sour chicken by deep frying them on medium heat till tender. Allow to drain & set aside.
  9. Cook onion in oil till transparent.
  10. Meanwhile combine the remaining ingredients except the green chillies & green pepper in a bowl. Mix well.
  11. Once the onions are transparent add the green chillies & green pepper. Cook for few seconds.
  12. Then add the mixture of sauces. Reduce heat & cook till thick.
  13. Now add the chicken & simmer for few mins. Serve with fried rice. Enjoy!
