Lamb Curry

Ingredients

  • 500g lamb
  • 1/4 onion chopped
  • 2 cinnamon sticks
  • 2 cloves
  • 1 tbsp oil
  • 1/4 tsp arad (turmeric powder)
  • 1 tsp salt
  • 1 tsp ginger garlic

Wagaar:

  • 3 medium sliced onions
  • 9 tbsp oil
  • 1 tbsp ginger garlic
  • 2 tsp dhana powder ( coriander powder)
  • 1tsp jeeru powder (cumin powder)
  • 1 tsp red chilli powder
  • 1/4 tsp arad (turmeric powder)
  • 1 big fresh tomato chopped
  • 3-5 tbsp tin tomato
  • 1 tsp tomato puree
  • 1 tsp garam masala
  • Chopped coriander
  • Ringed green chillies
  1. Recite Bismillah.
  2. Cook onions in oil with cinnamon & cloves until brown.
  3. Then add meat , ginger garlic & turmeric.
  4. Add salt when meat nearly done.
  5. Prepare the wagaar by cooking onions in oil till golden.
  6. Lower the heat & add ginger garlic & braise.
  7. Then add coriander powder, cumin powder,. red chilli powder, turmeric powder & cook for a few mins.
  8. Add fresh tomato , tinned tomato & tomato puree.
  9. Cook until oil separates.
  10. Add meat & 1 tsp garam masala.
  11. simmer on low heat for a few mins, add water if needed & salt to taste.
  12. Add desired amount of chopped coriander & green ringed chillies.
  13. Serve with naan.
